Episode 139: Brewing Wellness with Lindsey Sozio

[00:00:05] Welcome to Wellness In Every Season, the podcast where we explore the rich tapestry of wellness in all of its forms. [00:00:28] Today I have with me lindsay Soo. From Lavender Coffee Boutique. And I pre-interviewed her and had so much fun. So hopefully we still capture everything we talked about. I first wanna start off by letting you introduce yourself.
[00:00:46] I know that you have been on a journey that's led you here, and it was so fun to hear about your journey last time when we were chatting. So can we just start there, introduce yourself, and then dive into your journey.
[00:00:59] Lindsey Sozio - Lavender Coffee Boutique: [00:01:00] Hi, I am so glad to be here. I'm Lindsay. I founded Lavender Coffee Boutique here in Denver, Colorado.
[00:01:08] We are a wellness focused coffee company. We have a cafe here in Denver and then we also have our beans that we roast in house for sale on online through our website. And yeah, we're just trying to flip the coffee routine on its head and try to come at it from a more wellness oriented angle and see where that takes us.
[00:01:37] Autumn Carter: I'm not a coffee drinker, that's my caveat with all this, but she was explaining how much care goes into roasting them and making sure that they are the most nutritious possible you could just tell that she really cares about what she is doing here
[00:01:54] let's back up from that for a second and just talk about what led you here. [00:02:00] You have a background that is very different from where you are now. A lot of people have a really big life pivot like that, and it sounds like you're feeling really aligned with where you are.
[00:02:11] Lindsey Sozio - Lavender Coffee Boutique: Absolutely. I've had a really non-linear journey to get where I am today. After I went to college, I lived in New York City and I was in marketing and advertising. And that was really interesting way to learn about brands and. Storytelling and all the components that go into creating brands that really connect with consumers developing those stories.
[00:02:40] And that was really, great groundwork I think for me. And then after that with kids. And so that kind of took me out of the more corporate world for a while. And I started a small interior design firm that [00:03:00] I really enjoyed. I really enjoyed creating spaces that were timeless and comfortable and functional.
[00:03:08] And it's really fun, I think to have a vision for what a space could be and how people can use it, and how when you walk in someplace and you say this is just really, lovely and I can't put my finger on what exactly it is about the space that is so nice. But there's something about the way all these elements have come together that just makes it feel really nice.
[00:03:32] So that was like my second career point and then my husband and I had been, we've always been interested in coffee and we had this thought and this idea that coffee is just a really important part of a lot of people's morning routines. I know not yours, autumn, but a lot of the world.
[00:03:57] I said my [00:04:00] coffee routine is something that I just, I really treasure and enjoy every morning because it's how I wake up. I set my intentions for the day. I think about. How do I wanna, how do I wanna approach this day? What kind of mindset do I wanna have? Trying to approach every day with a mindset of gratitude and and getting the most out of everything.
[00:04:26] And I think having a wellness focused coffee routine. Was something that resonated with me, the thought. And then we started developing this branding and this idea around lavender coffee to create a more holistic wellness experience around your coffee routine.
[00:04:50] So we started the company we have our own roastery, so we really care about the whole process and we control the whole process [00:05:00] from where we get our beans all the way through production to where we serve the beans in our cafe. We try to roast for a, softer profile. A little bit more gentle acid to increase health benefits because if it's a lower acid coffee, it's not so harsh on your stomach.
[00:05:25] We also maintain the integrity of the antioxidants that are already within the coffee. We've developed this whole story around coffee and a healthy morning routine.
[00:05:35] And our thought is that if you can make one good decision in the morning with your coffee, then hopefully the rest of the day follows. And you start with one good thing and it keeps building on itself. And then have a really great daily routine.
[00:05:52] Autumn Carter: I want to just really pick apart where you said it's lower [00:06:00] acidity because my grandmother, she drank Folgers.
[00:06:05] That really tells you everything right there, right? It's, cheapest store brand possible. I'm pretty sure. Definitely I know that smell. I learned how to make it for her and I know her and a lot of people, had to cut back on their coffee because they were having stomach issues.
[00:06:26] But that totally makes sense.
[00:06:28] Lindsey Sozio - Lavender Coffee Boutique: Yeah. That's really interesting. We select our beans, like we have a, really amazing in-house roaster, and we call him the palate because he just, he can it's like wine. You can taste all these flavors. And he's always what do you think about this cup?
[00:06:47] And I'm like I and I'll identify like some things. And he is it's pretty good, but let me tell you what's really tasting. Okay, I get it. You're really, good at this. But anyway, we are totally aligned on this [00:07:00] idea that we try purposefully to.
[00:07:05] Come to a, more gentle acid. And so from the beans that we select all the way through roasting them, we really try to bring flavors forward and also achieve this like more gentle acid. We do have some coffees that are definitely low acid. And then we also for the most part, the rest of them would then be this more gentle acid profile.
[00:07:31] Autumn Carter: And then I remember when we were talking before, you talked about how the coffee experience can be different. You have people that come and go like normal coffee shop in your shops, but you even tried to flip that on its head a little bit.
[00:07:46] If I remember correctly.
[00:07:46] Lindsey Sozio - Lavender Coffee Boutique: Yeah, that's correct. Yes. So we've really we're trying to think about all the details and create an experience that is more hospitality forward. Where we, engage with [00:08:00] our customers. We have created a really lovely space that people like to spend time in.
[00:08:06] It's aesthetically pleasing. It's it's just, it's a lovely space to spend time in. We have people come in and they'll bring in crossword puzzles or games to play together instead of sitting on their phones. And we do have people who come in and work and that's totally great too.
[00:08:24] But it's really nice to see this sort of sense of community that feels like we're building. Part of our training is to talk this hospitality first mentality the customer. Is our focus. We remember names, we remember orders we deliver drinks to tables
[00:08:45] how can we make that person's day a better day is really what we ask. Everyone who works with us to do
[00:08:53] Autumn Carter: sounds more like it's a family feeling.
[00:08:55] Lindsey Sozio - Lavender Coffee Boutique: It is when you
[00:08:56] Autumn Carter: go there.
[00:08:57] Lindsey Sozio - Lavender Coffee Boutique: Yeah. We have lots of customers that come in every [00:09:00] day. Customers that come back twice a day. So I think what we're doing is something that really resonates with what people are looking for right now.
[00:09:13] And just having that sense of community and feeling like you can go someplace where you're gonna have a good experience.
[00:09:22] Autumn Carter: And if I remember right, you started during Covid.
[00:09:26] Lindsey Sozio - Lavender Coffee Boutique: We started right at the end of Covid. We started the company like as Covid was ending.
[00:09:32] And then we it takes a long time, turns out to get real estate up and going going through permitting and construction and all those fun things. So our first shop we opened in November of 2023.
[00:09:49] Autumn Carter: So really this idea really started to happen, but it didn't go fully live. But at the end of Covid, when we needed that connection the [00:10:00] most.
[00:10:01]
[00:10:01] Lindsey Sozio - Lavender Coffee Boutique: Yep. That's where you're going. I, think that's what people want right now. I think to feel like they belong somewhere and they can go somewhere and just have a, human connection.
[00:10:15] Autumn Carter: Yeah.
[00:10:16] Lindsey Sozio - Lavender Coffee Boutique: Yeah.
[00:10:17] Autumn Carter: So I know that you also ship out orders of this.
[00:10:23] Just this mindfulness, having this routine set up around coffee where you're really reflecting on your day, what you want it to look like. And I am curious, do you have any of that in your packaging as well?
[00:10:41] Lindsey Sozio - Lavender Coffee Boutique: Yes, we do. So if you look at our packages we, try to select a color palette and branding that aligns with this idea. And then we have a little story on the back of our packaging about our coffees and how this came about with the mindset of having an [00:11:00] intentional routine every day and trying to awaken your senses with coffee and feel like you are just ready to tackle whatever is gonna come your way.
[00:11:13] Yeah.
[00:11:15] Autumn Carter: I assume you used part of your design background in your store.
[00:11:21] Lindsey Sozio - Lavender Coffee Boutique: I did a lot of that myself. We're actually working on new locations now too, and I think I might have to have a little help. We're a little busy now but I'm really excited to have the opportunity to create more locations and see where.
[00:11:40] We can take our learnings from what we've done in the first one and how we can make it even better moving forward. Amazing.
[00:11:49] Autumn Carter: So you talked a lot about the social connection. Yep. We've talked about just the emotional part of like really connecting with your day, [00:12:00] and it sounds like there's been so much thought behind even the environment or the location that you're in.
[00:12:11] It's really interesting seeing how this really does play in with wellness and slowing down and taking care of yourself in a world that is so go, That we lose that connection with other people, with ourself, with where we're at, what we're putting into our bodies.
[00:12:28] So many other things that I love that you. Took the time to, unpack all of this. And as all things that turn out well, we start with ourself. We are our own Guinea pigs.

[00:13:22] Autumn Carter: Sounds like you definitely have the growth mindset there.
[00:13:25] Where did Lavender come from?
[00:13:27] Lindsey Sozio - Lavender Coffee Boutique: Probably the biggest caveat that I had to give everybody. No, our coffee does not contain lavender. The name came from, it's my favorite color. A plant that gives you the sense of calm and is used in a lot of calming.
[00:13:46] Products and so that's really where it came from.
